Gluten Free Pizza Bites

Looking for some healthier options for Super Bowl Sunday! How about trying some Gluten Free Pizza Bites?

2 cups cooked quinoa
2 eggs
1 teaspoon salt
1/2 freshly ground black pepper
1 teaspoon minced garlic
1 teaspoon onion powder
1 teaspoon of hot sauce (like Frank’s Hot Sauce)
1 cup mozzarella cheese or 1/2 cup of goat cheese (or if you want to go casein free, do not add any cheese)
1 cup of cooked ground beef
1 jalapeño pepper, diced (optional)
Marinara sauce for dipping

Preheat oven to 350 degrees F. Mix ingredients together. Spray a muffin pan with cooking spray and put a heaping teaspoon of the mixture into each spot of the muffin pan. Press down to tighten the mixture and to remove any air. Bake for 15-20 minutes or until edges are brown and the mixture is completely cooked through. Remove from muffin pan and serve with marinara sauce for dipping. Makes 24 cups.
